( 01 ) — Philosophy

An evening at Maren is built on one idea — that dinner should never be rushed. The menu follows the morning market, everything meets the fire, and each course is set down without ceremony.

( 03 ) — The Room

A space built

for slowness.

Blackened oak, hand-troweled plaster, beeswax and brass. Nothing in the room is louder than the food — or the person across from you.

( 04 ) — The Chef

Julien
Castel

Julien cooked at Atelier Verre in Paris and ran the pass at Hollow Oak in New York before moving west in 2019. He shops the Santa Monica market on Wednesdays, writes the menu by hand on Thursdays, and refuses to plate with tweezers.

“Simplicity — of the will-take-a-lifetime kind.”

A room of your own.

Behind the velvet curtain: one vaulted room, one walnut table, twelve chairs. Bring the people you’d cancel anything for.

Élodie Marchand

Wine Director

Two hundred-odd bottles, small growers, old-world lean. Élodie pours what she loves and nothing she doesn’t.
